AT THE ORIGIN OF THIS PROJECT, KIM EBERHARD AND NATHAN GEORGE. FORMER OWNERS OF THE RESTAURANT LES INSOLENTS, OPENED IN 2019 IN UZES, SMALL TOWN IN THE HEART OF SOUTH OF FRANCE. THIS PLACE WAS ABOUT EMPHASIZING SINGULARS TALENTS BY OFFERING RESIDENCIES TO MULTIPLE CHEFS.
WITH A CELLAR COMPLETELY BUILT WITH FREE WINES, DEVELOPED OVER THE YEARS AND INSPIRED BY MEETING THE WINEMAKERS, IT’S VERY NATURALLY THAT THE REFLEXION AROUND THE REPRESENTATION WAS BORN: THESE VARIOUS COLLABORATIONS ONLY CONFIRMED THE FACT THAT IT WAS ESSENTIAL TO LINK THE PLATE AND ITS ENVIRONNEMENT. THE PROPOSITION SPREADS FROM THE SIMPLE DISCOVERY OF WINES THROUGH TASTING WORKSHOPS TO THE ELABORATION OF AN EXCLUSIVE MOMENT IN ALL ITS DETAILS.
